Revered by many, yet condemned by others, the twelfth of August is still the day of the Grouse.

Buying game birds is as difficult today as ever, with such problems as year old birds (yearlings) or how long to mature in the feather?

At Wilsons we buy all our game produce from long established game dealers who understand these problems and the changing marketplace.

Game has seen an enormous growth over the past ten years, primarily due to growth within the catering market. Consumers can try out these new dishes, knowing a knowledgable chef has prepared them. Once experienced, many people are now trying them at home, which has lead to many game birds now being available in the supermarkets.

Game is subjected to close seasons, when it is not available, to allow the birds to breed. It is controlled by the Game Act 1831 and amended in 1970, and it is illegal to kill game in England and Wales on a Sunday!
