It
is an essential feature of a Food Safety System that finished
products can be traced back to their raw material and thus
to their original producer. At Wilson's we have introduced
a bespoke software package, written in-house, to control all
aspects of ordering and production.
The Process
starts with orders being placed with approved suppliers and
entered on the System. This information is available via our
internal network to Goods-In, Production and Accounting Departments.
At Goods-In
the products are checked for specification, de-boxed into
Hygiene trays and labelled. This label has a unique Goods-In
Code, which identifies the original order.
At
Production the product is removed from storage and an entry
is made onto the system which allocates a Product
Identification Number (PIN), and prints out a Quality Assessment
document. This document records "who did - what to - when"
information along with temperature and specification checks.
The
product is then butchered to specification, and packaged with
a new label showing the PIN. The PIN is recorded on each Customer
order form. This assures our Customers that should a problem
develop, we can not only trace back the product history, but
also recall product from other Customers if necessary.
